Frozen Peach Pie

Ingredients

  • 9 lb ripe peaches
  • 1 tsp Fruit-Fresh
  • 1 gal water
  • 3 12 c sugar
  • 12 c plus 2 Tbsp Minute tapioca
  • 14 c lemon juice
  • 1 tsp salt

Directions

  1. Scald peel and slice peaches
  2. Measure 4 quarts
  3. Dissolve Fruit-Fresh in water
  4. Add peaches drain
  5. Combine peaches with other ingredients
  6. Line four 8-inch pie pans with heavy-duty foil letting it extend about 5 inches beyond the pan
  7. Divide the filling among foil lined pans
  8. Fold foil over loosely
  9. Freeze until firm then cover tightly
  10. Remove from pan return to freezer
  11. May be stored 6 months
