Fruit-Glazed Easter Ham

Ingredients

  • 5 to 7 lb smoked ham
  • 1 8 oz can crushed pineapple drained
  • 13 c orange marmalade
  • 2 Tbsp lemon juice
  • 14 tsp ground cinnamon
  • dash of allspice
  • 13 c flaked coconut

Directions

  1. Place ham fat side up on rack in open roasting pan
  2. Insert meat thermometer so bulb is centered in thickest part
  3. Be careful bulb does not rest in fat or on bone
  4. Do not add water
  5. Do not cover
  6. Roast at 325 until meat thermometer registers 130 to 140 for fully cooked half ham 18 to 24 minutes per pound or 160 for a cook before eating half ham 22 to 25 minutes per pound
