Fruit Filled Thumbprints

Ingredients

  • 2 c flour
  • 12 c brown sugar
  • 1 c butter
  • 2 eggs separated
  • 18 tsp salt
  • 1 tsp vanilla
  • 1 12 c chopped pecans
  • fruit preserves of choice

Directions

  1. In food processor combine all ingredients except egg whites pecans and preserves
  2. Shape rounded teaspoonfuls of dough into 1-inch balls
  3. In small bowl beat egg whites until foamy
  4. Dip balls into egg whites roll in finely chopped pecans
  5. Place 1-inch apart on greased cookie sheet
  6. Make depression in each cookie with back of teaspoon
  7. Bake at 375 for 8 minutes
  8. Remove from oven
  9. Fill centers with preserves
  10. Continue baking for 6 to 10 minutes or until light brown
  11. Yield
  12. 3 dozen
