Fruit Scones

Ingredients

  • 3 c. self-rising flour
  • 1/4 c. sugar
  • 1/4 c. firmly packed light brown sugar
  • 1/2 c. dry cranberries or cherries, coarsely chopped
  • 1/2 c. chilled butter, cut into pieces (1 stick)
  • 1 c. whipping cream

Directions

  1. Preheat oven to 400°.
  2. Butter 2 large cookie sheets.
  3. Sift flour into bowl.
  4. Mix in both sugars.
  5. Add butter and rub in fingertips until mixture resembles coarse meal.
  6. Add 1/2 cup dried fruit.
  7. Stir in enough cream to form soft, slightly sticky dough. Turn dough out onto slightly floured surface and knead until just combined.
  8. Gather dough into ball; flatten into disc.
  9. Roll out to thickness of 3/4-inch.
  10. Cut out rounds using 2-inch round cookie cutter.
  11. Gather scraps and re-roll on floured surface.
  12. Cut out additional rounds.
