Fruity Eggnog MuffinsMicrowave

Ingredients

  • 1 12 c flour
  • 6 Tbsp dry eggnog mix
  • 2 Tbsp sugar
  • 1 tsp baking soda
  • 34 c candied cherries quartered
  • 12 c milk
  • 14 c oil
  • 1 egg

Directions

  1. Combine flour eggnog mix sugar and baking soda
  2. Stir in cherries coated with dry mixture
  3. Blend in milk oil and egg Line each compartment of a foam insulated large or jumbo egg carton with paper mini baking cups
  4. Spoon batter into each cup filling 23 full
  5. Place a cherry quarter in center of each muffin
  6. Close lid of carton and microwave on 50 for 3 minutes rotating carton midway through cooking
  7. Do not peek
  8. Leave lid closed and set carton flat for 3 minutes
  9. Remove muffins
  10. Repeat procedure twice for 36 mini muffins
