Garden Stir-Fry

Ingredients
- 2 boneless and skinned chicken breasts
- 2 Tbsp olive oil divided
- 1 clove garlic minced
- 1 medium onion chopped
- 1 medium zucchini sliced
- 1 green pepper cut into strips
- 1 c sliced mushrooms
- 1 medium tomato cut into wedges
- 2 c spaghetti cooked
Directions
- Cut chicken breasts diagonally into thin strips
- Heat one tablespoon oil in large skillet or wok
- Stir-fry chicken strips and garlic until chicken loses its pink color
- Remove from pan and set aside
- Heat the remaining tablespoon of oil
- Stir-fry the onion zucchini and green pepper for 3 minutes
- Add mushrooms and tomatoes
- Continue to stir-fry an additional 3 minutes
- Return chicken to skillet
- Add spaghetti
- Stir-fry until heated through Serves 3 to 4
