Garden Zucchini Pie
Ingredients
- 3 c refrigerated loose-packed hash browns
- 14 c finely chopped onion
- 14 c grated Parmesan cheese
- 2 medium zucchini thinly sliced 2 12 c
- 1 clove garlic minced
- 1 Tbsp oleo or butter
- 3 beaten eggs
- 34 c shredded Cheddar or Swiss cheese 3 oz
- 12 c milk
- 2 tsp snipped fresh or 12 tsp dried oregano leaves crushed
- 14 tsp each salt and pepper
Directions
- In a large mixing bowl combine 1 egg onion and Parmesan cheese
- Stir in potatoes
- Put potato mixture in a 9-inch pie pan or 10-inch quiche dish
- Pat the mixture over the bottom and up the sides of the pan
- Bake uncovered in a 400 oven for 35 to 40 minutes or until golden brown
- Cool slightly on a wire rack Reduce oven temperature to 350
