Garlic Pork Roast
Ingredients
- 1 pork loin roast backbone loosened about 5 lb
- 12 medium green peppers finely chopped
- 12 c thinly sliced green onion
- 12 c chopped celery
- 8 garlic cloves minced
- 1 tsp salt
- 14 tsp cayenne pepper
Directions
- With a sharp knife cut deep pockets between each rib on meaty side of roast
- Combine green peppers green onion celery and garlic stuff deeply into pockets
- Season roast with salt and cayenne pepper
- Insert meat thermometer
- Place roast rib side down in a shallow roasting pan
- Bake uncovered at 325 for 2 to 3 hours or until thermometer reads 170
- Let stand 15 minutes before carving
