Gazpacho

Ingredients

  • 3 c coarsely chopped cored and peeled tomatoes
  • 1 12 c peeled and coarsely chopped cucumbers
  • 1 green pepper cored seeded and coarsely chopped
  • 1 clove garlic sliced
  • 12 c water
  • 5 Tbsp olive oil
  • 14 c wine vinegar
  • 2 slices untrimmed fresh bread cubed
  • 18 tsp cayenne
  • salt to taste

Directions

  1. Puree all ingredients in blender Chill
  2. Serve in well chilled soup bowls
  3. Pass as a garnish croutons finely diced cucumbers onion and green pepper
