Gazpacho
Ingredients
- 3 c coarsely chopped cored and peeled tomatoes
- 1 12 c peeled and coarsely chopped cucumbers
- 1 green pepper cored seeded and coarsely chopped
- 1 clove garlic sliced
- 12 c water
- 5 Tbsp olive oil
- 14 c wine vinegar
- 2 slices untrimmed fresh bread cubed
- 18 tsp cayenne
- salt to taste
Directions
- Puree all ingredients in blender Chill
- Serve in well chilled soup bowls
- Pass as a garnish croutons finely diced cucumbers onion and green pepper
