Georgia Peanut Butter Potatoes

Ingredients

  • 2 16 oz cans sweet potatoes
  • 12 c margarine or butter
  • 1 small 8 oz can crushed pineapple including juice
  • 3 eggs
  • 1 c brown sugar
  • 14 c milk
  • 1 large jar crunchy peanut butter

Directions

  1. Combine first 6 ingredients and beat until fluffy
  2. Put 34 of potato mixture in a 13 x 9-inch casserole
  3. Cover with peanut butter then top with remaining potatoes
  4. Bake at 375 for 30 minutes or until center is firm
