German-Style Red Cabbage

Ingredients

  • 1 small red cabbage
  • 1 small onion chopped
  • 2 Tbsp sugar
  • 1 tsp salt
  • 1 bay leaf
  • 14 c water
  • 2 Tbsp red wine vinegar
  • 1 apple peeled and chopped
  • 3 slices bacon cooked and crumbled

Directions

  1. Cut cabbage into 6 wedges removing core place in large saucepan
  2. Add onion sugar salt bay leaf and water
  3. Bring to boil
  4. Cover reduce heat and simmer 20 minutes
  5. Add vinegar and apple cover and cook 3 to 4 minutes or until apple is tender
