German-Style Red Cabbage

Ingredients
- 1 small red cabbage
- 1 small onion chopped
- 2 Tbsp sugar
- 1 tsp salt
- 1 bay leaf
- 14 c water
- 2 Tbsp red wine vinegar
- 1 apple peeled and chopped
- 3 slices bacon cooked and crumbled
Directions
- Cut cabbage into 6 wedges removing core place in large saucepan
- Add onion sugar salt bay leaf and water
- Bring to boil
- Cover reduce heat and simmer 20 minutes
- Add vinegar and apple cover and cook 3 to 4 minutes or until apple is tender
