German-Style Sauerkraut Kugel

Ingredients

  • 1 medium head cabbage
  • 3 Tbsp oil original fat or drippings
  • 4 slices white bread
  • 12 c flour
  • 14 c chopped candied peel orange grapefruit citron are fine
  • 12 c chopped almonds
  • 12 tsp salt
  • 18 tsp each cinnamon nutmeg and allspice
  • juice and grated rind of 1 lemon
  • 6 eggs
  • 12 c packed dark brown sugar
  • 12 c seedless raisins

Directions

  1. Discard outer cabbage leaves
  2. Wash rest and chop or shred fine
  3. Saute in oilfat until browned
  4. Soak bread in water squeeze thoroughly and mix with cabbage
  5. Put in a large mixing bowl
  6. Add rest of ingredients blending well
  7. Grease a 10-inch tube pan well pour in mix and bake at 325 for 1 hour and 15 minutes or until firm
