German Hot Potato Salad
Ingredients
- 3 lb potatoes
- 14 c finely diced bacon
- 14 c chopped onion
- 1 Tbsp flour
- 2 tsp salt
- 1 14 Tbsp sugar
- 14 tsp pepper
- 23 c cider vinegar
- 13 c water
- 12 tsp celery seed
- 3 Tbsp chopped parsley
Directions
- Cook potatoes in skin until tender
- Cool peel and thinly slice
- Fry bacon until crisp
- Add onion and cook one minute Blend in flour salt sugar and pepper
- Add vinegar and water Cook 10 minutes stirring well
- Pour over sliced potatoes
- Add celery seed and parsley
- Toss gently
- Serve
- warm
- Yields 6 portions
- Great served with roast beef or baked ham
