German Potato Salad

Ingredients
- 5 to 10 lb red skin potatoes
- 2 c vinegar
- 1 c 2 Tbsp sugar
- 12 c oil
- 1 large red onion chopped
- salt and pepper to taste
- fresh parsley chopped
- crisp fried bacon crumbled or bacon bits optional
Directions
- Boil potatoes in skins
- Slice and peel while hot
- Mix rest of ingredients and pour over potatoes while hot
- Let stand 8 hours
- Does not need refrigeration if eaten on day that it is made
