German Potato Salad

Ingredients

  • 4 medium potatoes
  • 4 slices bacon
  • 1 small onion chopped
  • 2 Tbsp sugar
  • 1 Tbsp flour
  • 1 tsp beef bouillon
  • 1 tsp salt
  • dash of pepper
  • 14 c vinegar
  • 12 c water
  • 14 tsp ground allspice if desired

Directions

  1. Cook unpeeled potatoes
  2. In frypan fry bacon until crisp Drain on paper towels reserving 3 tablespoons drippings
  3. Crumble bacon
  4. To reserve drippings add onion
  5. Cook until tender
  6. Add sugar flour bouillon and spices
  7. Stir until smooth
  8. Stir in vinegar and water bring to boil
  9. Peel warm potatoes
  10. Slice and add to sauce mixture with bacon
  11. Toss lightly to coat
  12. Serve warm
  13. Makes 4 to 5 servings
