German Potatoes
Ingredients
- 3 medium size white potatoes
- 3 strips bacon
- 14 onion or 3 to 4 green onions
- 12 c white vinegar
- 13 c water
- 1 12 Tbsp sugar
- 12 tsp pepper
- 12 tsp salt
- 1 Tbsp flour
Directions
- Peel potatoes slice or cut into 12-inch pieces and boil in salted water just until tender
- Be careful not to overcook or the potatoes will become mush
- Meanwhile cut bacon into small pieces Cut onion into small pieces or green onions into thin slices
- Mix together vinegar water sugar pepper and salt
- Fry bacon in skillet until crisp then scoop bacon out of skillet into vinegar mixture leaving drippings in skillet
- Saute onion in drippings Add flour to onion in skillet and stir until smooth and thickened Drain potatoes when tender and pour into skillet
- Add baconvinegar mixture and stir gently to mix evenly
