German Red Cabbage

Ingredients
- 1 small head red cabbage
- 1 small chopped onion
- 2 Tbsp sugar
- 1 tsp salt
- 1 bay leaf
- 14 c water
- 2 Tbsp red wine vinegar
- 1 chopped apple
- 3 slices bacon
Directions
- Remove cabbage core shred cabbage
- Add onion sugar salt bay leaf and water
- Bring to a boil then simmer 20 minutes
- Add vinegar and apple
- Cook additional 3 or 4 minutes
- Sprinkle with bacon bits
