Gingered Chicken Stir-Fry

Ingredients

  • 12 lb chicken tenders or breast sliced diagonally in 14-inch slices
  • 8 oz Mandarin oranges drained
  • 34 tsp ground ginger
  • 34 Tbsp cooking oil
  • 3 oz frozen snow peas
  • 14 c Oriental stir-fry sauce

Directions

  1. Cut chicken
  2. Drain oranges reserving 14 cup syrup
  3. Cook ginger in hot oil 30 seconds
  4. Add chicken and stir-fry about 3 minutes
  5. Add snow peas reserved syrup and stir-fry sauce
  6. Heat to boiling
  7. Reduce heat cover and cook 2 minutes
  8. Top with orange sections
  9. Serve over rice
  10. Makes 2 servings about 300 calories
