Gnocchi

Ingredients
- 1 lb Ricotta cheese
- 2 c flour
- 1 egg
Directions
- Beat egg before you mix in rest of ingredients
- Flour hands and separate dough into 4 sections
- Roll each section into snakes on a floured surface
- Cut 1-inch pieces out of the snakes and with thumb press flat
- Fast freeze about 10 minutes on a cookie sheet
- When hard cook in boiling water salted for 5 minutes after they rise to the top of the pot
- Serve with spaghetti sauce
