Golden Pineapple Layer Cake

Ingredients

  • 1 20 oz can crushed pineapple in juice
  • 1 8 oz carton frozen whipped topping thawed
  • 1 4 serving size pkg instant vanilla pudding mix
  • 1 pkg frozen pound cake thawed
  • 13 c almond flavored liqueur or 13 c pineapple juice and 12 tsp almond extract
  • sliced pineapple for garnish optional
  • 12 c sliced almonds toasted for garnish optional
  • strawberries or raspberries for garnish optional

Directions

  1. Combine undrained pineapple whipped topping and pudding mix Let stand 5 minutes
  2. Cut cake lengthwise in thirds
  3. Drizzle with liqueur
  4. Spread one-third pudding mixture over bottom layer of cake
  5. Top with second layer
  6. Repeat
  7. End with topping
  8. Chill 30 minutes
  9. Sprinkle with toasted sliced almonds
  10. Garnish with pineapple slices andor raspberries or strawberries
