Golden Pineapple Layer Cake
Ingredients
- 1 20 oz can crushed pineapple in juice
- 1 8 oz carton frozen whipped topping thawed
- 1 4 serving size pkg instant vanilla pudding mix
- 1 pkg frozen pound cake thawed
- 13 c almond flavored liqueur or 13 c pineapple juice and 12 tsp almond extract
- sliced pineapple for garnish optional
- 12 c sliced almonds toasted for garnish optional
- strawberries or raspberries for garnish optional
Directions
- Combine undrained pineapple whipped topping and pudding mix Let stand 5 minutes
- Cut cake lengthwise in thirds
- Drizzle with liqueur
- Spread one-third pudding mixture over bottom layer of cake
- Top with second layer
- Repeat
- End with topping
- Chill 30 minutes
- Sprinkle with toasted sliced almonds
- Garnish with pineapple slices andor raspberries or strawberries
