Goose Or Duck And Sweet Dressing

Ingredients
- 3 lb dressed duck
- 1 12 c apples diced
- 13 c warm water
- salt to taste
- 1 c prunes soaked but not cooked
- 3 Tbsp butter or fat
- 34 c tart pie cherries
- 3 c bread cubes
- juice of 1 orange
Directions
- Melt fat and saute apples until tender add all other ingredients and cover
- Steam about 8 to 10 minutes
- If cherries are very tart add 1 tablespoon sugar
- Stuff bird and truss
- Bake with breast up until brown then turn over
- Do not prick skin
- I make a double recipe and tie what is leftover in a cloth and put in the pan with the duck
