Gooseberry Pudding

Gooseberry Pudding

Ingredients

  • 14 c margarine
  • 34 c flour
  • 12 c milk
  • 13 c sugar
  • 1 tsp baking powder
  • 1 c washed and stemmed gooseberries
  • 1 c sugar
  • 1 Tbsp margarine
  • 1 c boiling water

Directions

  1. Cream margarine and 13 cup sugar well
  2. Add baking powder and flour mix well
  3. Add milk to creamed mixture
  4. Spread in greased 8-inch pie pan
  5. Top with berries
  6. Sprinkle 1 cup sugar over berries dot with margarine and pour boiling water over all
  7. Bake 30 to 40 minutes at 375 until lightly brown
