Gourmet Potatoes

Ingredients
- 6 medium potatoes
- 2 c 8 oz shredded Cheddar
- 14 c butter
- 1 12 c sour cream
- 13 c chopped green onion
- 1 tsp salt
- 14 tsp pepper
- 2 Tbsp butter
Directions
- Cook potatoes in their skins
- Cool
- Peel and shred coarsely Over low heat combine cheese and 14 cup butter stirring occasionally until almost melted
- Remove from heat and blend in sour cream onions salt and pepper
- Fold in potatoes and turn into a greased 2-quart casserole
- Dot with 2 tablespoons butter and bake at 350 for 25 minutes or until heated through
- Serves 6 to 8
