Ingredients

  • 1 very large eggplant or 2 medium ones
  • olive oil
  • 4 large cans crushed tomatoes or puree
  • fresh garlic cloves about 6 crushed
  • lots of fresh basil leaves
  • 2 1 lb pkg Mozzarella shredded
  • salt and pepper to taste
  • dash of sugar optional
  • 2 lb spaghetti

Directions

  1. Peel and slice eggplant into circles
  2. Fry in olive oil until browned
  3. Place on paper towels or paper bags to blot oil out Set aside
  4. Begin your marinara sauce
  5. Saute garlic in oil until brown in the bottom of a pot
  6. Add tomatoes basil salt and pepper dash of sugar optional
  7. Let sauce simmer about 12 hour or 45 minutes
