GranS Easter-Egg Cake

Ingredients

  • 1 envelope unflavored gelatin
  • 12 c cold water
  • 6 eggs separated
  • 1 12 c sugar divided
  • 34 c lemon juice
  • 1 12 tsp lemon rind
  • 1 8 or 9-inch angel food cake broken into small pieces
  • 1 c heavy cream whipped and sweetened
  • shredded coconut tinted green

Directions

  1. Sprinkle gelatin over water and let soften
  2. Blend yolks and 34 cup sugar in top of double boiler
  3. Add lemon juice and rind and cook over simmering water stirring constantly do not let water touch bottom of pan
  4. When thick as medium white sauce remove from heat
  5. Add softened gelatin and stir until dissolved Chill until mixture thickens and mounds
