GranS Easter-Egg Cake
Ingredients
- 1 envelope unflavored gelatin
- 12 c cold water
- 6 eggs separated
- 1 12 c sugar divided
- 34 c lemon juice
- 1 12 tsp lemon rind
- 1 8 or 9-inch angel food cake broken into small pieces
- 1 c heavy cream whipped and sweetened
- shredded coconut tinted green
Directions
- Sprinkle gelatin over water and let soften
- Blend yolks and 34 cup sugar in top of double boiler
- Add lemon juice and rind and cook over simmering water stirring constantly do not let water touch bottom of pan
- When thick as medium white sauce remove from heat
- Add softened gelatin and stir until dissolved Chill until mixture thickens and mounds
