Grated Potato Dumplings

Ingredients
- 3 raw potatoes grated fine
- 1 Tbsp salt
- 4 eggs beaten
- 2 to 3 c flour
- 2 onions diced
- 14 lb butter
Directions
- Grate potatoes
- Add salt and beaten eggs
- Add enough flour to make a soft dough
- Drop by spoonfuls into boiling water cook for 8 to 10 minutes
- Drain and rinse in hot water
- Cook onion until golden brown in butter
- Pour onions and butter over dumplings
- Serve hot
