Grated Sweet Potato Pudding
Ingredients
- 3 lb sweet potatoes or yams
- 3 c sugar
- 4 eggs
- 2 c milk
- 1 tsp nutmeg
- dash of salt
- 12 lb soft butter
Directions
- Wash peel and grate potatoes into a large pot
- In a large bowl cream sugar butter salt and nutmeg
- Mix into pot with potatoes
- Combine in another bowl the milk and eggs then add to dry ingredients
- Cook over medium heat stirring constantly until mixture is firm with a candied appearance
- Pour mixture into a 4-quart casserole and cook at 400 until browned
- May be served hot with a meal or cold as a dessert
