Gratin Of Potatoes With Boursin

Ingredients

• 2 c whipping cream
• 1 5 oz bag Boursin cheese with herbs
• 4 lb baking potatoes peeled and cut 18-inch thick
• salt and pepper to taste

Directions

1. Combine cream and Boursin in a large heavy saucepan
2. Cook stirring constantly until mixture is smooth
3. Remove from heat Arrange potatoes in a greased 9 x 13-inch dish overlapping edges Season with salt and pepper
4. Pour cheese mixture over potatoes covering them completely
5. Bake at 375 for 45 to 50 minutes or until potatoes are tender
