Greek Cabbage Soup
Ingredients
- 1 c chopped onion
- 3 Tbsp olive oil
- 2 qt water
- 1 lb tomatoes peeled and chopped
- 2 lb cabbage shredded
- 2 tsp salt
- 12 tsp freshly ground black pepper
- 2 Tbsp minced parsley
Directions
- Saute
- the
- onion in the oil 5 minutes
- Add the water bring to
- a
- boil
- Mix
- in
- the
- tomatoes cabbage salt and pepper Bring
- to
- a
- boil again and cook over low heat 1 14 hours or until cabbage is tender
- Taste for seasoning
- Stir in
- the parsley
- Serve with sauteed bread
- Beef bone or ham bone
- or chunks
- may be added for richer taste
- Also soup is very
- good if served with melted Gruyere or Mozzarella cheese on top with toasted croutons
