Greek Roasted Chicken

Ingredients

  • 1 roasting chicken 6 lb
  • salt and pepper to taste
  • 3 tsp dried oregano divided
  • 34 c chicken broth
  • 4 to 6 peeled quartered potatoes
  • 14 c margarine melted
  • 3 Tbsp fresh lemon juice

Directions

  1. Place chicken on a rack in roasting pan
  2. Season with salt and pepper and 1 12 teaspoons oregano
  3. Arrange potatoes around chicken sprinkle with salt pepper and oregano
  4. Pour butter and lemon juice over chicken and potatoes
  5. Add chicken broth to pan bottom
  6. Bake at 350 for 2 to 2 12 hours
  7. Baste with juices while baking
