Greek Roasted Chicken
Ingredients
- 1 roasting chicken 6 lb
- salt and pepper to taste
- 3 tsp dried oregano divided
- 34 c chicken broth
- 4 to 6 peeled quartered potatoes
- 14 c margarine melted
- 3 Tbsp fresh lemon juice
Directions
- Place chicken on a rack in roasting pan
- Season with salt and pepper and 1 12 teaspoons oregano
- Arrange potatoes around chicken sprinkle with salt pepper and oregano
- Pour butter and lemon juice over chicken and potatoes
- Add chicken broth to pan bottom
- Bake at 350 for 2 to 2 12 hours
- Baste with juices while baking
