Green Beans With Red Pepper And Shallots

Ingredients
- 2 lb fresh green beans
- 3 large shallots chopped
- 1 large red bell pepper julienned
- 13 c butter
- 1 tsp kosher salt
- pepper to taste
Directions
- Blanch green beans in boiling water for 3 to 4 minutes Plunk into ice water to prevent continued cooking
- Drain
- Saute shallots and bell pepper in butter for 3 to 5 minutes or until tender
- Stir in green beans salt and pepper
- Cook just until heated
- Serve immediately
