Green Beans With Red Pepper And Shallots

Ingredients

  • 2 lb fresh green beans
  • 3 large shallots chopped
  • 1 large red bell pepper julienned
  • 13 c butter
  • 1 tsp kosher salt
  • pepper to taste

Directions

  1. Blanch green beans in boiling water for 3 to 4 minutes Plunk into ice water to prevent continued cooking
  2. Drain
  3. Saute shallots and bell pepper in butter for 3 to 5 minutes or until tender
  4. Stir in green beans salt and pepper
  5. Cook just until heated
  6. Serve immediately
