Green Chile Casserole Grits

Ingredients

  • 6 c boiling water
  • 2 tsp salt
  • 1 lb Velveeta cheese
  • 1 can diced green chiles
  • 1 stick oleo
  • 1 12 c quick grits
  • 3 eggs beaten

Directions

  1. Bring water and salt to a boil
  2. Add grits cook slowly until thick
  3. Add cheese cut in pieces green chiles and oleo stir until cheese melts
  4. Beat in eggs
  5. Pour into buttered casserole and bake for 1 hour at 275
