Green Chili Grits Casserole

Ingredients

  • 6 c boiling water
  • 1 12 tsp salt
  • 1 lb Velveeta cheese light Velveeta may be used
  • 1 can chopped green chili peppers
  • 12 stick margarine low-fat may be used
  • 1 12 c grits
  • 2 eggs beaten

Directions

  1. Use a large thick boiler
  2. Bring water and salt to a boil Add grits cook slowly until thick
  3. Add cheese cubed green chilies and margarine
  4. Stir until the cheese melts
  5. Stir in the beaten eggs
  6. Pour into a casserole dish sprayed with nonstick spray
  7. Cook for 1 hour in a 275 to 300 oven
  8. Makes 8 to 10 servings
  9. Recipe may be cut in half
