Green Enchiladas

Ingredients

  • 1 lb ground beef
  • 14 tsp garlic powder
  • 34 cup evaporated milk
  • 1 pkg dry green onion dip mix
  • 1 small can chopped green chiles
  • 12 lb grated Cheddar cheese
  • 1 tsp salt
  • 1 can cream of chicken soup
  • 12 lb Velveeta cheese
  • 1 small jar chopped pimentos
  • 1 cup chopped onion
  • 1 dozen tortillas

Directions

  1. Brown ground beef with salt and garlic
  2. Drain well Set aside
  3. Make sauce heat soup milk and Velveeta until melted Add green chiles dip mix and pimentos
  4. Add cheese and onions to meat
  5. Mix well
  6. Soften tortillas by dipping them one at a time in hot oil in shallow skillet Drain Fill with meat mixture Roll and place in a greased 10 x 13 casserole dish
  7. Pour cheese sauce over top
  8. Cover and bake at 350 for 30 minutes
