Green Goddess DressingLow-Fat

Ingredients

  • 14 c chopped fresh parsley
  • 14 c chopped scallions
  • 1 garlic clove chopped
  • 12 c plain no-fat yogurt
  • 2 Tbsp low-fat milk
  • 1 12 tsp fresh lemon juice

Directions

  1. In a blender or food processor combine the first 4 ingredients with 1 tablespoon of the milk and 12 of the lemon juice and blend or process until smooth
  2. Taste for seasoning and add salt pepper and additional lemon juice as needed
  3. For a thinner dressing add the remaining milk and blend until smooth
