Green Pepper Pineapple Salad
Ingredients
- 2 pkg cream cheese
- 14 c crushed pineapple drained
- 1 pimento cut fine
- 2 Tbsp pecans chopped fine
- 1 tsp gelatin
- 1 tsp pineapple juice
- 3 good firm green peppers seeds removed
Directions
- Soak gelatin in the pineapple juice and dissolve over hot water
- Add to pineapple and cream cheese mixture
- Fill green peppers and set in refrigerator to harden
- With a very sharp knife cut the stuffed peppers crosswise into thin slices
- Serve on lettuce with mayonnaise
