Green Tomato Pickles
Ingredients
- 4 qt tomatoes
- 12 gal onions
- 12 gal green peppers some hot
- 12 gal vinegar
- 5 c sugar
- 1 c salt
- 1 small bag pickling spices
Directions
- Cut tomatoes and onions tomatoes in quarters and slice onions
- Sprinkle 1 cup salt over this and let stand 12 day Heat mixture of vinegar sugar and bag of spices
- Drain onions and tomatoes
- Add onions tomatoes and peppers to hot mixture and cook until tomatoes change color about 10 minutes
- Do not cook until tomatoes are soggy
- Pack in jars and seal
- Use hot pepper according to how hot you like
