Grilled Sausage And Scallops With Peppers Lemon Basil And Garlic

Ingredients

  • 1 12 lb fresh sea scallops
  • 4 3 to 4 oz each freshly ground sausage links
  • 1 large yellow onion cut into cubes
  • 1 large red bell pepper seeded and cut into 12 large sq
  • 1 large green pepper seeded and cut into 12 large sq
  • salt and freshly cracked black pepper to taste
  • 4 Tbsp freshly chopped basil
  • 1 tsp minced garlic
  • 2 Tbsp extra virgin olive oil
  • 3 Tbsp lemon juice about 2 lemons worth
  • 2 Tbsp balsamic vinegar

Directions

  1. Blanch the scallops in boiling salted water for 1 minute Drain and allow to cool
  2. Cook the sausage in boiling water until completely cooked about 5 minutes
  3. Drain and allow to cool Thread the scallops sausages and vegetables on skewers and season with salt and pepper
  4. Cook the skewers over a medium fire until all the ingredients have attained some brown crusting about 3 to 4 minutes
  5. Slide the ingredients off skewers into a large bowl
  6. Add basil garlic oil lemon juice and balsamic vinegar
  7. Shake the bowl until everything is well mixed
