Grits And Cheese Souffle

Ingredients

  • 1 c quick or regular cooking grits
  • 2 c milk
  • 2 c water
  • salt and pepper to taste
  • 14 tsp grated nutmeg
  • 12 tsp Tabasco
  • 13 lb sharp Cheddar cheese grated
  • 6 large eggs separated

Directions

  1. Grease a 2-quart souffle dish
  2. Preheat oven to 425
  3. Cook grits in milk and water according to package directions
  4. Add salt
  5. When grits are cooked add pepper nutmeg Tabasco and all but 12 cup of cheese
  6. Mix well and then allow to cool slightly Add egg yolks
  7. Beat egg whites stiff and add half of them to the grit mixture beat well
  8. Fold in remaining egg whites with a rubber spatula
  9. Spoon into the souffle dish and sprinkle remaining cheese over the top
  10. Bake 25 minutes
