Ham And Egg Pasta

Ingredients

  • 8 oz uncooked whole wheat or regular fettuccini
  • 2 Tbsp olive oil
  • 12 c sliced green onions
  • 12 c dairy sour cream
  • 2 Tbsp skim milk
  • 14 c chopped fresh parsley
  • 12 tsp salt
  • 18 tsp pepper
  • 1 12 c julienne cut turkey ham or cooked ham
  • 4 eggs hard-cooked and cut into wedges

Directions

  1. Cook fettuccini to desired doneness as directed on package Drain rinse with hot water
  2. Keep warm
  3. In large skillet over medium-high heat heat oil
  4. Saute onions for 1 to 2 minutes or until crisp-tender
  5. Reduce heat to medium
  6. Stir in sour cream milk parsley salt and pepper
  7. Cook stirring constantly until hot
  8. Do not boil
  9. Stir in turkey ham egg wedges and fettuccini toss gently
  10. Makes 4 1 12 cup servings
