Ham And Pineapple Casserole

Ingredients

  • 3 c cooked ham diced
  • 1 medium onion
  • 1 small green pepper
  • 12 c raisins
  • 13 c vinegar
  • 1 13 12 oz can chunk pineapple
  • 12 c brown sugar packed
  • 2 tsp dry mustard
  • 2 Tbsp cornstarch
  • 1 tsp Worcestershire sauce
  • 1 Tbsp soy sauce

Directions

  1. Arrange cooked ham in the bottom of a 13 x 9-inch baking dish Slice onion and pepper thinly and place over ham
  2. Drain pineapple reserving syrup
  3. Arrange pineapple over pepper and onion and add raisins
  4. Set aside
  5. Combine pineapple juice with enough water to make 1 cup
  6. Stir in vinegar and bring to a boil Mix brown sugar mustard cornstarch and salt and add to the pineapple juice mixture
  7. Add Worcestershire sauce and soy sauce and cook until thick
  8. Pour over ham and bake at 350 for 30 minutes
