HarrietS Chicken Cantonese

Ingredients
- 1 lb cut up chicken
- 14 c oil
- 12 c soy sauce
- 6 Tbsp dry sherry
- 2 tsp vinegar
- 2 minced scallions
- 2 large cloves garlic minced
- 18 tsp cayenne
- 2 tsp ginger
Directions
- Heat oil in skillet or wok and saute chicken until brown Blend rest of ingredients and add to skillet
- Mix cover and simmer for 25 minutes stirring occasionally
- Place chicken in platter and coat with sauce
