Harvest Bread
Ingredients
- 3 c sugar
- 34 c shortening
- 4 eggs
- 2 c mashed cooked yams
- 1 6 oz can frozen orange juice concentrate thawed
- 3 12 c flour
- 2 tsp baking soda
- 2 tsp cinnamon
- 2 tsp nutmeg
- 12 tsp allspice
- 12 tsp ground cloves
- 1 12 tsp salt
- 1 c chopped pecans
Directions
- Combine sugar shortening and eggs in mixer bowl
- Beat until smooth
- Add yams and orange juice concentrate mix well
- Mix flour baking soda cinnamon nutmeg allspice cloves and salt together
- Add to batter 13 at a time mixing well after each addition
- Stir in pecans
- Spoon into 4 greased and floured coffee cans
- Bake at 350 for 40 to 45 minutes or until loaves test done
- Remove to wire rack to cool
