Harvest Cake

Ingredients

• 1 34 c sugar
• 3 eggs
• 1 c cooking oil
• 2 c all-purpose flour
• 1 tsp soda
• 1 tsp cinnamon
• 1 tsp salt
• 4 to 5 cooking apples tart diced
• 1 c walnuts chopped

Directions

1. Blend together with wooden spoon the eggs sugar and oil until oil is blended
2. Sift flour soda cinnamon and salt
3. Stir with spoon into egg mixture
4. Do not overbeat
5. Fold in diced apples and nuts
6. Grease a 9 x 13-inch pan lightly
7. Bake at 350 for 1 hour or until cake leaves side of pan
8. When cold sprinkle with powdered sugar
