Harvest Cake
Ingredients
- 1 34 c sugar
- 3 eggs
- 1 c cooking oil
- 2 c all-purpose flour
- 1 tsp soda
- 1 tsp cinnamon
- 1 tsp salt
- 4 to 5 cooking apples tart diced
- 1 c walnuts chopped
Directions
- Blend together with wooden spoon the eggs sugar and oil until oil is blended
- Sift flour soda cinnamon and salt
- Stir with spoon into egg mixture
- Do not overbeat
- Fold in diced apples and nuts
- Grease a 9 x 13-inch pan lightly
- Bake at 350 for 1 hour or until cake leaves side of pan
- When cold sprinkle with powdered sugar
