Harvest Cake

Ingredients

• 4 c diced cooking apples Stamen Rome or York
• 2 c sugar
• 3 c flour
• 2 tsp soda
• 1 tsp salt
• 1 tsp vanilla
• 1 c cooking oil
• 2 eggs
• 1 c black walnuts
• mixed fruit if desired

Directions

1. Dice apples
2. Mix well with sugar let stand for 1 hour
3. Add flour soda salt vanilla oil eggs walnuts and fruit
4. Mix well
5. Pour into baking pan
6. Bake at 325 for 45 to 55 minutes
