Harvest Potatoes With Herbs

Ingredients

  • 6 Tbsp oleo or butter
  • 12 tsp salt
  • 6 Tbsp finely chopped onion divided
  • 14 tsp dried basil leaves
  • 14 tsp dried thyme leaves
  • 2 lb potatoes peeled sliced thinly and divided
  • 14 tsp pepper

Directions

  1. Heat oven to 425
  2. In small bowl combine seasonings
  3. Place 2 tablespoons melted oleo in 10-inch nonstick skillet
  4. Arrange a third of the potato slices in a circular pattern in skillet Sprinkle with about 14 teaspoon seasonings 4 teaspoons melted oleo and 2 tablespoons onion
  5. Repeat layers twice
  6. Cover tightly with foil press layers down
  7. Bake 20 minutes
  8. Uncover bake 20 minutes or until potatoes are tender
  9. Remove from oven press layers down with a spatula
  10. Let stand 10 minutes
  11. Invert onto serving platter to unmold potatoes
