Harvest Soup
Ingredients
- 14 c onion chopped
- 12 c celery diced
- 12 c carrots sliced
- 12 c potatoes diced
- 12 c cabbage shredded
- 12 c turnips diced
- 1 Tbsp fresh parsley chopped
- 12 c frozen cut green beans
- 14 tsp dried basil
- 18 tsp pepper
- 1 bay leaf
- 1 12 c boiling water
- 1 16 oz can tomatoes
Directions
- Add all ingredients except tomatoes to boiling water
- Cover and boil gently for 15 minutes
- Break up large pieces of tomato and add to vegetable mixture
- Continue cooking until vegetables are tender about 20 minutes
- Remove bay leaf and serve with grated Parmesan cheese
- Makes 4 servings 1 cup each
