Harvest Sweet Potato Biscuits

Ingredients

  • 1 egg slightly beaten
  • 1 c mashed cooked sweet potatoes
  • 14 to 12 c sugar
  • 2 Tbsp margarine softened
  • 2 c self-rising flour
  • 3 Tbsp shortening

Directions

  1. Combine egg sweet potatoes sugar shortening and margarine in a bowl mix well
  2. Stir in enough flour to make a soft dough Knead lightly several times on floured surface
  3. Roll to 14-inch thickness cut with 2-inch biscuit cutter
  4. Place on greased baking sheet
  5. Bake at 350 for 15 minutes
  6. Makes 17 biscuits
