Hash Brown CasseroleLow-Fat Version

Ingredients

  • 1 pkg frozen hash brown potatoes
  • 1 c sour cream alternative
  • 12 c low-sodium chicken broth
  • 1 small onion chopped
  • 1 green pepper chopped
  • 1 14 c skim milk
  • 14 tsp salt
  • 12 tsp pepper
  • 3 Tbsp flour
  • 12 tsp dry mustrrd
  • 12 c reduced fat Cheddar cheese
  • 12 c low-fat Mozzarella or Swiss cheese
  • 1 c corn flakes crushed

Directions

  1. Saute onion slightly in Pam-sprayed pan
  2. Add flour mustard salt and pepper
  3. Gradually add milk and broth stirring constantly
  4. Cook until thickened
  5. Remove from heat and stir in sour cream
  6. Combine with potatoes and top with cheese and corn flakes if desired
  7. Bake in 13 x 9-inch Pam-sprayed pan at 350 for 35 minutes
