Hash Brown Potatoes

Ingredients

  • 1 lb baking potatoes peeled and quartered
  • salt
  • butter or margarine
  • salt and pepper

Directions

  1. In medium saucepan over medium heat cook potatoes in boiling salted water until tender drain
  2. Over low heat shake pan to dry potatoes
  3. With a table knife chop potatoes until almost mashed Place potatoes in a heavily buttered 8-inch skillet
  4. Pat down top evenly dot with butter or margarine and sprinkle with salt and pepper
  5. Cover cook over low heat until bottom is browned
  6. Lift gently with spatula to check
  7. To serve invert onto plate so browned side is up
