Haupia
Ingredients
- 2 c milk
- 1 c sugar
- 1 pt whipping cream
- 1 can shredded coconut
- 2 Tbsp unflavored gelatin
- 12 c water
- 12 tsp vanilla
Directions
- Stir sugar into milk heat until sugar dissolves
- Soak gelatin in water
- Dissolve in hot milk
- Cool then chill until mixture starts to thicken
- Whip cream until stiff add vanilla Fold cream into custard
- Sprinkle a few spoonfuls of the coconut evenly around the bottom of a medium size ring mold
- Add the rest of the coconut to the creamed mixture folding it in gently
- Put into refrigerator overnight covered with plastic wrap or foil
