Hawaiian Coconut Pie

Ingredients

  • 12 c light corn syrup
  • 12 c sugar
  • 2 eggs well beaten
  • 1 Tbsp butter
  • 14 tsp salt
  • 1 tsp vanilla
  • 2 tsp lemon juice
  • 1 c Post 40 Bran Flakes
  • 23 c coconut
  • 14 c milk

Directions

  1. Bring syrup and sugar to a boil in a small saucepan
  2. Slowly pour over beaten eggs beating constantly to blend
  3. Add butter stir until melted
  4. Stir in salt vanilla lemon juice cereal coconut and milk
  5. Pour into unbaked pie shell
  6. Bake at 375 about 30 minutes or until top is set and lightly browned
  7. Serve warm or cooled with or without whipped topping
